The thing that happens in summer is that you’re far less attracted to the prospect of going straight home after work (or if you work from home, staying home after you’ve closed your laptop). In London this generally means some sort of alcoholic beverage, most often in a pub close to your place of work where likeminded people are spilling out onto the street. Two pints in, friends disperse, some to dates, some to trains, some home. Arriving home at 7.30pm, spending 20 minutes scrolling on the bed with the fan on, then suddenly realising how urgently hungry you are leaves no slow cooking for dinner. Instead, one pan, many ingredients, quick to chop, fast to cook, condiments to taste. Call it a hash (it is) and call it yet another variation on my breakfast tacos recipe-not-recipe (it is). Just add a Korean mayak marinated jammy egg (which you might have made a day or so earlier).
