Sunset Pasta (feat. tahini, preserved lemons + feta)
Like midnight pasta but with more ingredients and for an early dinner
To paraphrase Mean Girls: I saw Ottolenghi use tahini in pasta, so I used tahini in pasta. It’s not perfect. It was a first go. But it tasted delicious - just need to get that sauce a little glossier. Might need to employ a similar technique to egg yolks in a carbonara and take it off the heat, stirring in the pasta water before… let me know how it goes for you, and I’ll report back on the second attempt! Just couldn’t not share it before it was perfect – my literal life MO (impatience and slight sloppiness).
