Summer Sad Pasta #1927
There are hundreds of iterations that I could make to Sad Pasta and whilst I cannot purport to own pasta + tomatoes + garlic + something salty + something spicy (basically a puttanesca), I find that I always return to this foundation when I don’t know what to cook. After a particularly trying Sunday walking around in the sun and sitting in a backyard patio hidden behind Main Street with a glass of pale rosé, we returned hungry and with little energy for anything too elaborate. This is the preferred state of Sad Pasta. This one was inspired by the crispy fried capers that sat on top of our salads earlier that afternoon and, to be honest, by the things we needed to use up in the fridge before going away for a few days. It brings together simple, fresh ingredients: tomatoes, jarred red peppers and garlic.
