Story of my life: there has been very little cooking. But I did make a mushroom pasta for my dear friend Luce at her’s (true friendship is being able to cook in someone else’s kitchen without breaking a sweat) a couple of weeks ago, and not much more since (bar a miso butter roast chicken with brothy beans but let’s be honest I share way too many roast chicken recipes – but I’ll write down a vague method for anyone interested in this week’s Leftovers). I’ve become increasingly more interested in one pot meals, mainly because as I’m getting older, I’m realising that simplicity is the key to happiness and we don’t need to make things so complicated (still learning this lesson the hard way but pasta is a good way to start).
