I finally cooked a meal at home and it’s been delightful to return to the kitchen. I made this worthy breakfast salad on Sunday morning after a late night in West London, when upon coming home at 3am, I ate a McDonald’s double cheeseburger that had been in my bag since 7pm. My body was in need of green things. The beauty of this salad is that it’s basically a variation of the same salad I make, usually involving home fries, kale, greens, grains and some sort of salty crunchy topping. So there’s no need to stray too far from the edge – think of it as everything you’d put on toast but in a bowl. I also will acknowledge that I owe you guys an essay; one day I will feel like there is enough time in the week.
