It could have been laziness or pure determination to use up everything in my fridge, but I manage to squeeze three meals out of a bunch of kale, the last few new potatoes, the end of an old cucumber, the vegan cheese I was kindly sent by Julienne Bruno (not usually my vibe but I actually quite liked it for its lightness!) and some sauerkraut that I keep in bulk. It might have also been something to do with the sad girl autumn vibes I’ve been giving off, which have typically been warded off by one day of glorious sun and crisp blue sky weather. With trips booked to Amsterdam, Paris and New York next month, I’ll be cooking a little more frugally, so be prepared for many potato recipes and a lot more rice.
