Mum's Korean Chicken
I often leave my bag with things you might not always expect to be leaving with. A few tins of anchovies; a ziplock bag of rice to tide me over since the 9kg we bought in New Malden in October has been emptied; many satsumas; and last time, two freezer bags of my mum’s famous Korean chicken, ready to be frozen. This chicken dish is so comforting to me and is on repeat at my parents house, especially when mum would go to the theatre and leave me and my dad at home to fend for ourselves. We’d always have rice in the cooker, a tray of chicken to throw in the oven and a tart cucumber salad to go with it. Failing that, dad would usually get us chicken kievs from M&S and hide the boxes from mum. Lol.
