An evening on the patio of my favourite restaurant in LA with a friend I’ve known since I was 15. Warm city breezes, English humour, childhood memories, a creamy tahini dip and Persian crispy rice brought together with a bright orange-juice hued egg yolk. But my favourite dish was the little gem salad studded with pistachios and fresh mint. So obviously I had to recreate. Citrus, garlic, honey, oil are always the base of my salad dressings – but I added a few unexpected ingredients to add depth and umami to the flavour (no, it’s not miso!). Inspired by my favourite Green Goddess seasoning from Trader Joes, there’s some extra herby flavours in there. Might be my new favourite spring/summer dressing?
