If you really want to know me, swim with me at sunset on an empty beach where the light glitters on the water. This is where I feel most at home. Lucky for me, I’m on the Sunshine Coast where I have been doing this habitually, chasing the sun, walking through forests, floating in the sea. I’m lapping it up until the city beckons me back.
One of the hottest food tip I got this trip is the addition of blueberry jam to a salad dressing, courtesy of my friend G who said a chef pal of hers swears by this. It honestly tasted 10/10: a few tsp of blueberry jam, 1tsp Dijon mustard, a splash of balsamic, 1 part vinegar or citrus of some sorts, 2 parts extra virgin olive oil, salt, pepper and a clove of grated garlic! We chucked cukes, radishes and rocket in there and ate it with a tuna sandwich.
