It seems impossible that I’m leaving Cornwall next week. Summer slips away so easily, fading in and out until it’s just a faint glimmer remembered on our skin. I’m writing to you from a near empty Penzance beach, where the tide is low and slowly creeping in, and my stomach is full of noodles whipped up in under 10 minutes. I’ve posted various versions of this cold noodle dish but I think this one is my favourite - it’s got a little creaminess to ease us into cooler afternoons. I intend on soaking up these dog days as much as I can. Happy hours, dinner parties, birthday lunches, morning swims, final surfs and boat view saunas await.
