Korean Noodle Salad: Recipes-not-recipes #37
I went to Paris over the weekend and did as one does in Paris which is drink copious amounts of wine, cheese, butter and frites. As obsessed as I am with this melange of foods and the fact that Paris truly is a 24 hour city where you can order a roast chicken, a platter of fries and a beef tartare at midnight, I came home craving my mother tongue: specifically cold Korean noodles. Spring sunshine means sitting in the park at lunch, eating something from a Tupperware (although in our case it often means the jerk chicken and curry box from the van on Calvert Avenue). This is my antidote: a take on bibim guksu (spicy cold Korean noodles) and a Japanese soba noodle salad. With plenty of crunch and a spicy, salty sauce.
