Is it summer yet? I’m writing this outside where mackerel skies form above me, the sun hot, the wind pronounced, the scene set for a day on the river. For the past two days I’ve been burning candles and drawing hot baths and curling up on the sofa watching episode after episode of The Bear, clutching a glass of red wine, listening to the tap tap tap of rain against the corrugated plastic roof just beyond the living room. Britain is always confused during this season. And so, a salad that feels like summer but retains the hardiness and crunch of winter: warm potatoes, crunchy cabbage, garlicky yoghurt and honeyed halloumi.
