I said to myself I’d perfect the Spanish tortilla, one of my favourite things in the world (especially when made by Tranga in Newington Green). This is not a perfect tortilla. But it did taste pretty good and while there is always room for improvement (I think this calls for a rounder, smaller, ideally metal pan), I feel confident enough in sharing this recipe-not-recipe because my friend Sophia said it tasted very good (her words not mine, but she wasn’t lying).I’ll admit it doesn’t look as good as it could because I found it impossible to flip my cast iron pan due to its shape and lack of handles. I swore at myself so loudly that one of my neighbours walking past my kitchen window actually stopped out of concern. (I think). Cooking in a bad mood is therapeutic, anyway. Enjoy!
