I’m sorry to say that I am one of those people who complains when it’s 32º outside (no really it was too hot!) but earlier today I sat outside for 10 minutes eating a sandwich, hopped on a bike and as I was cycling I thought, wow it’s a bit chilly. I’m that person! I cannot be satisfied! Except when I make this salad, which did happen to strike a perfect balance during the heatwave: tart, salty, sweet, crispy, crunchy, altogether a sight to behold. I’ve said it before and I’ll say it again, lime miso honey ginger garlic olive oil salt pepper whisked together with wild abandon absolutely slaps. I didn’t know if it would work, but something about the umami in the miso means this dressing works with pecorino AND chilli oil, which isn’t always the case.
