I tend to adapt the meals I cook to whoever I’m cooking for. My friend Chris crashed for a few nights after a particularly heavy stag do in Somerset, and so I was aware he was in need of comfort. A whole chicken – the skin stuffed with garlic and parsley butter – roasted over Cornish potatoes on the first night. Mussels and chips at the pub the night after. And this last night.
I rarely cook with onions – they sit in my kitchen waiting to be plopped into a pot of stock or brothy beans. It’s not something I’d automatically reach for, but I had half an idea about caramelising them – lemons, too – then the meal was obvious. Sausages, pasta, borlotti beans, brought together with those caramelised onions and lemons – and the homemade chicken stock that had been sitting on the stove earlier.
For two hungry people you’ll need
A packet of sausages (ordinarily would say 2 per person, but if you’re hungry and just want to use them up, use all 6!)
