I actually don’t LOVE beetroot. It’s sort of a middling affection; as in, I’ll eat it if it’s there, but I rarely go to buy it. What made me reach for the golden hues and candy striped pinks? Not sure, but I think it was the blood orange sitting on my counter that needed to be juiced. I often pull together salads based on colour palette – crunchy greens from chopped kale to thinly sliced snap peas or creamy rounds of avocado with ridged hunks of cucumber. So this salad pays homage to those more sunset shades: pinks, yellows, purples and reds. Cabbage, radishes and beets collide with rocket and peas (honestly I just needed to use them up), and sit on top of a creamy white base.
